Last month, Simon had the honour of joining Alain Ducasse and Emmanuel Pilon at the incredible Le Louis XV in Monaco, marking the start of the Festival des Etoilés.

Both chefs not only boast the prestigious accolade of their three Michelin-starred restaurants but also share a deep commitment to sustainability and a dedication to showcasing the produce of local terroir through their choice of ingredients.
